有關吃的二、三事 ——- 你今日「食」咗末?

以下是從麥可.波倫(Michael Pollan) 的《飲食規則:83條日常實踐的簡單飲食方針》(Food Rules: An Eater’s Manual) 節錄的一些有趣又實用的規則, 我們每次品嘗大地之母的所有禮物前, 或許我們可以跟我們的身體商量一下.

  • 不要吃你的(祖)祖母不會視為食物的東西.
  • 避免吃內含有三年級學生不懂稱謂的成份的食物產品。
  • 主要吃植物, 尤其是帶葉的.
  • 若在不同語言裹, 它的名字都是一樣的話, 那就不是食物了. (試想想 Big Mac, Cheetos, Pringles)
  • 「吃用一腳站立的東西( 菇類和植物)比吃兩腳站的(家禽類)好, 而吃兩腳站的又比四腳站立的(牛豬或其他哺乳類)好.」
  • 吃牠們也吃得好的動物.
  • 儘量吃野生食物.
  • 可隨意吃自己親手弄的零食.
  • 吃得像個法國人, 或日本人, 或意大利人, 或希臘人.
  • 慢吃. 如印度諺語 喝你的食物, 咀嚼你的飲料.
  • 在餐桌上吃東西. 辦公桌不是餐桌.
  • 若有足夠空間, 種植一個蔬果花園; 若不, 種植一個窗台盒子.
  • 偶爾打破規則.

這只是一些有關吃的建議, 最重要的還是以「愛」去享受. 如<<死過一次才學會愛>> (Dying to be me)的作者艾妮塔.穆札尼 (Anita Moorjani)所說:

「我曾經對我所吃的都十分考究, 但卻不是由於對自己的愛和自身的關懐; 而是擔憂和恐懼這些食物會為我帶來什麽影響……現在我認知到我對食物的情緒遠比食物本身對我的影響……
我吃一片朱古力或一件甜點, 是由於我希望享受吃它的感覺和享受每一口滋味.」

Something about food —— When was your last “eating” ?

These are some practical and interesting ideas for us, the eaters to think about or to follow when every time we want to savor the gift from the nature.

Some quotes from “Food Rules: An Eater’s Manual“, written by Michael Pollan

  • Don’t eat anything your great-grandmother wouldn’t recognize as food.
  • Avoid food products containing ingredients that a third-grader cannot pronounce.
  • Eat mostly plants, especially leaves.
  • It’s not food if it’s called by the same name in every language. (Think Big Mac, Cheetos, or Pringles.)
  • “Eating what stands on one leg [mushrooms and plant foods] is better than eating what stands on two legs [fowl], which is better than eating what stands on four legs [cows, pigs, and other mammals].”
  • Eat animals that have themselves eaten well.
  • Eat wild foods when you can.
  • Eat all the junk food you want as long as you cook it yourself.
  • Eat more like the French. Or the Japanese. Or the Italians. Or the Greeks.
  • Eat slowly. Indian proverb that gets at this idea: “Drink your food, chew your drink.”
  • Do all your eating at a table. No, a desk is not a table.
  • Plant a vegetable garden if you have the space, a window box if you don’t.
  • Break the rules once in a while.

These are merely some suggestions about how to eat, above all, the most important rule is “with love”. Just as Anita Moorjani, the writer of “Dying To Be Me” say.

I also used to be very particular about everything I ate, not because of a love for myself or a caring for my body. It was because of fear of what these foods would do to me… I now realize that it’s the emotions I feel about the food that has more effect on me than the food itself…
Even if I eat a piece of chocolate or dessert, I eat it because I want to enjoy the sensation of eating it, and enjoy every bite.

Four seasons, Five elemenst and Our Daily Bread 不時不吃

不時不吃 Nourishing ourselves with the seasons

Life flows with ease. The earth offers us different seasons with different texture, various flavors, smells and colours of natural resources to nurture us. If we choose what we eat according to what the nature provides us, both of us (man and the Cosmo) will be more nourishing.

Below is a glimpse at the relationships between four seasons (how the nature goes through its tides), five elements, the interactions between different internal organs and systems, according to traditional Chinese medicine and The Emperor’s Inner Canon (黃帝內經).

無麩質蕎麥朱古力曲奇餅食譜 gluten-free chocolate crispy cookie receipe

易製 可口 健康 (若你懂適可而止)
無麩質香脆朱古力曲奇餅乾食譜

vegetarian butter free egg free cookies

gluten free snack

可製份量: 10-12曲奇餅

材料:

1/2杯+2 湯匙 (約50克) 無麩質燕麥片
2 湯匙 蕎麥粉(除另外註明,一般的蕎麥粉是不含麩質的)
1/4茶匙 蘇打粉 (baking soda)
1/8茶匙 海鹽
1 1/2湯匙 有機原蔗糖 (sucanat)
1茶匙 無糖可可粉
1/2茶匙 天然雲呢拿香精 (natural vanilla extract)
1湯匙 蜂蜜
2湯匙 原巧克力片
1湯匙 初榨椰子油
1-2湯匙 杏仁奶
1-2湯匙 杏仁碎

healthy chocolate cookies

  1. 預熱焗爐至375度。
  2. 用攪拌機拌勻燕麥、蕎麥麵粉、蘇打粉、鹽、糖、無糖可可粉和雲呢拿香精。
  3. 將拌好的燕麥、蕎麥麵粉、蘇打粉、鹽、糖、和無糖可可粉和雲呢拿香精倒入碗中,並慢慢加入椰子油、蜂蜜和奶,拌勻,直到混為一團。
  4. 用手指捏麵團,如果麵團不夠粘,可再慢慢逐次加入奶,令粉團足以粘結揉成小團。
  5. 拌入巧克力片和杏仁碎。
  6. 用一個小勺或手,捏麵團成丸子,平均放在烘盤上的牛油紙上。
  7. 放進焗爐烘烤6分鐘,或直至曲奇四邊緣開始鬆脆。
  8. 讓香氣撲鼻的曲奇「冷靜」2-3分鐘,直到它們形狀固定和變得更鬆脆。healthy chocolate snack
